Cabbage Stew

What’s for dinner tonight? Tonight I will be making my version of a cabbage stew. It is a vegetarian recipe with lots and lots of veggies to keep you satisfied :) I cut my sweet potato into small cubes to make it cook faster and the chutney adds a lovely sweetness to the dish.


  • half a cabbage, roughly chopped
  • 1 x sweet potato, cubed
  • half a punnet of mushrooms, sliced
  • 4 x medium carrots, thinly sliced
  • 3 x tablespoons chutney
  • salt and pepper to taste
  • water
  • 3 x garlic cloves, minced
  • 1 x medium white onion, sliced
  • 1 x tin chopped tomatoes
  • broccoli
  • cauliflower
  • 1 x tin red kidney beans
  • 2 x tablespoons worcestershire sauce

Preparation Method

Step 1: Add sweet potato, cauliflower and broccoli to a pot with a small amount of water. Cook until almost soft (you will add this to the other pot near the end for the last few minutes of cooking)

Step 2: Heat a little oil in a non-stick pan (I have an awesome deep non-stick pan that can double as a pot). Add onion and garlic. Fry for 3 minutes or so.

Step 3: Add mushrooms and carrots. Fry for 3 minutes.

Step 4: Add cabbage, red kidney beans, chutney,a little bit of water, salt and pepper and worcestershire sauce. Place lid on pot and cook for 5-7 minutes.

Step 5: Add tin chopped tomatoes, broccoli, cauliflower and sweet potato to pot. Replace lid and simmer for 2-3 minutes.

This dish can be served with some healthy brown rice. I had it without and it was still superb!! :)
